みなさん、こんにちは！
WSET Level 3のお勉強、引き続きやっております。
今回はカベルネ・ソーヴィニヨンのまとめをしてみました。メモを整理しながら以前飲んでいたボトルを思い出して意外と楽しいです。
カベルネ・ソーヴィニヨンと言えば、ボルドーのオー・メドックと答えてくる人が多いでしょう。ポイヤック、サンテステフ、マルゴーなどもよくランクインです。個人的に右岸のほうがお気に入りですが、ワイン会で左岸が好きな方々に出会えたらカベルネ・ソーヴィニヨンへの認識が強まってきます。
WSET試験の話に戻しますと、カベルネ・ソーヴィニヨンと「ブレンド」というキーワードとよくセットで出てくると気づきました。ちゃんと対策しないといけません。
さて、今日のメモを一緒に読みましょう！
①オー・メドック(ボルドー地方)
ワインの特徴
-一般的に、カシスの葉や果実がメインに、それをオークの杉の香りが補います。
-若いうちはグリップの効いたタンニンを持ち、しばしば長期熟成の可能性を持ちます。
-熟成させるとタンニンが和らぎ、味がより明確になります。
-早熟でジューシーなプラムの香りと滑らかな舌触りを与えるメルローがブレンドされています。
-高い評価を得ているのは、サンテステフ、ポイヤック、サンジュリアン、マルゴーです。これらのワインは、カベルネ・ソーヴィニヨンのブレンド比率が高い。
アロマ／フレーバーの特徴
・カシスの葉／果実の香り。
・樽由来のセダーの香り。
Haut-Medoc (Bordeaux)
Characteristics of Wine
-Generally display a core of blackcurrant leaf/fruit, complemented by cedar notes from oak.
-Have grippy tannins when young, and often have a long ageing potential.
-With age, the tannins soften and the flavours become more expressive.
-Wines are usually blended with a proportion of Merlot, which ripens earlier and gives juicy plum fruit flavours and a smoother texture to the wine.
-The highest reputation is Saint-Estephe, Pauillac, Saint-Julien and Margaux. These wines have a high percentage of Cabernet Sauvignon in the blend.

③イタリア(主にトスカーナ)
ワインの特徴
-カベルネ・ソーヴィニヨンと土着品種（イタリアではサンジョベーゼ）のブレンドが一般的です。
-カベルネ・ソーヴィニヨンを使用した「スーパー・タスカン」の原型は、PDOに該当しないにもかかわらず、プレミアム価格で販売されていました。
-多くのトスカーナの生産者がこの例に倣い、カベルネ・ソーヴィニヨンを含む国際品種から高品質のワインを造っており、時にはイタリア品種をブレンドすることもある。多くはトスカーナIGTとしてボトリングされています。
-比較的最近設立されたボルゲリDOCとマレンマ・トスカーナDOCのアペラシオンでは、カベルネ・ソーヴィニョンだけでワインを造ることが認められています。
Italy (mainly Tuscany)
Characteristics of Wine
-Cabernet Sauvignon is generally blended with indigenous grape varieties, Sangiovese in Italy.
-The original 'Super-Tuscan' was made from Cabernet Sauvignon and sold for a premium price despite not being eligible for PDO status.
-Many Tuscan producers have followed this example and make high-quality wines from international varieties including Cabernet Sauvignon, sometimes with Italian varieties as part of the blend. Many are bottled as Toscana IGT.
-The relatively recently formed appellations of Bolgheri DOC and Maremma Toscana DOC both permit wines to be made entirely from Cabernet Sauvignon.

Napa Valley (California)
Characteristics of Wine
-The ripeness it attains from the warm temperatures and long hours of bright sunlight in many regions of these countries gives full-bodied wines with ripe blackcurrant and black cherry notes and smooth tannins.
-Many of the wines in California are full-bodied, with very concentrated ripe cassis flavours and prominent spice aromas from new oak barrels. Some producers choose to make their Cabernet Sauvignon in a less rich style, with fresher blackcurrant flavours.

ワインの特徴

Characteristics of Wine
-Australian Cabernet Sauvignon is generally darker, with firmer tannins and higher acidity than Shiraz, displaying ripe black fruit characters (blackcurrant, black cherry), often n underpinned by toasty oak notes.
-Coonawarra- Cabernet Sauvignon, which predominates, is made into concentrated, structured wines with characteristic cassis and eucalyptus or menthol aromas. The best examples age very well.
-Margaret River - Cabernet Sauvignon is widely planted, and often blended with Merlot in a Bordeaux-style blend. A number of different styles are produced ranging from elegant and restrained to fruity and powerful.

New Zealand (incl Hawke’s Bay)
Characteristics of Wine
-Cabernet Sauvignon is often blended to add tannin and notes of cassis, making up a Bordeaux-style blend. Like all the wines from New Zealand these blends are noted for the purity of their fruit flavours. Production of these varieties is strongly concentrated in the North Island, where the warmer temperatures help to ripen black grapes.

-Cabernet Sauvignon is the most widely planted black variety,
-Cabernet Sauvignon is used for varietal wines s and also blended with Merlot and Cabernet Franc for Bordeaux-style blends.
-In hot climates it gives rich, full-bodied reds that are often high in alcohol and display ripe black fruit flavours, sometimes with an earthy or meaty character. It is also grown in some cooler areas giving less full-bodied, peppery examples.
-In recent years, Stellenbosch has built up a reputation for top class red wines, in particular Cabernet Sauvignon and Merlot red blends (which are often made in Bordeaux-style blends).
